Sugar Beet (Beta vulgaris subsp. vulgaris) is a high-yielding root crop renowned for its sweet, white-fleshed roots that are used primarily for sugar production. This hardy biennial produces large, conical roots that contain a high concentration of sucrose, making it one of the primary sources of commercial sugar. The robust plants also feature lush, green, leafy tops that can be harvested as nutritious animal fodder. Sugar Beets thrive in cool to moderate climates and are commonly grown for both sugar extraction and animal feed.

Growing Instructions

Direct-sow Sugar Beet seeds outdoors as soon as the soil can be worked in early spring or late summer for a fall crop. Sow seeds 1/2 inch deep, spaced 2–4 inches apart in rows 12–18 inches apart. Thin seedlings to 4–6 inches apart once they reach 3–4 inches tall. Sugar Beets thrive in full sun and rich, well-draining soil with consistent moisture. Keep the soil evenly moist during root development for optimal sweetness and size. Harvest roots when they reach 3–4 inches in diameter for the best quality. Store in a cool, dry place or process for sugar production.
