Florence Fennel (Foeniculum vulgare var. azoricum), also known as Bulb Fennel, is a versatile heirloom variety celebrated for its crisp, anise-flavored bulbs and feathery, aromatic foliage. This unique vegetable forms a plump, white bulb at the base with finely divided, fern-like leaves. Known for its mild, slightly sweet, and licorice-like taste, Florence Fennel is a favorite in Italian and Mediterranean cuisine. Growing Instructions

Start Florence Fennel seeds indoors 4–6 weeks before the last frost date or sow directly outdoors once the soil warms to around 60°F. Sow seeds 1/4 inch deep in rich, well-draining soil. Space plants 12 inches apart in rows 18–24 inches apart. Fennel thrives in full sun but can tolerate partial shade, especially in hotter climates. Keep the soil consistently moist to encourage the formation of large, tender bulbs. Harvest when bulbs reach about 3–4 inches in diameter, cutting at the base just above the soil. Use the feathery leaves as an herb, and the seeds as a spice.
